Blend Beautifully in this dish. The kids always come back for seconds and I don’t have to worry about a glycemic load from eating to their heart’s content. I choose a variety of vegetables to add to this depending upon what I have around. Carrots are always a favorite as is Napa Cabbage, celery, peppers and mushrooms.
Noodles of any variety may be used in this dish. Ramen noodles are quick and easy. I like to buy the larger package of Asian Ramen noodles. They cook up the same, and you get more in a package. The kids aren't tempted to take and cook them up for a quick meal either. 🙂
Your choice of vegetables such as:
Basically whatever you have in the fridge works.
1-2 tsp. Chicken style seasoning
Italian Seasoning Blend
Hot Pepper Seasoning Blend
Seasonings are to taste. But try to stay away from using salt for seasoning.
1 pkg. Ramen Noodles
Wash and slice the vegetables.
If using carrots, wash, slice and begin cooking them immediately.
Add the other vegetables and simmer for 5-10 minutes depending on degree of "doneness" you like.
Add seasonings and stir.
Make a well in the center of the pan.
Add the Ramen noodles either whole or crushed. Do not use the seasoning packet unless you have no other seasoning to use.
Cook an additional 3 minutes until the noodles are done.
Serve in bowls and garnish with green onions.
This is my all time favorite. Quick and easy and very healthy too. Kids love to eat it and I love to make it. This was originally inspired by the Cup 'O Noodles idea of adding veggie chunks to Ramen noodles to make a quick lunch meal. We took it a step further and used fresh veggies and a lot more than just a chuck.
